Golden Plantains Stir-Fry

ingredients

  • 2 medium chopped Plantains
  • 1 teaspoons cumin seeds
  • 1 teaspoo mustard seeds
  • 2 teaspoon Red chili powder
  • 1/2 teaspoon turmeric powder
  • 2 dried red chilies
  • 1 tablespoon yellow Split peas
  • 2 teaspoon urad dal
  • 10 curry leaves
  • 2 tablepoons extra virgin olive oil
  • salt per taste

Method

  • Step 1

    Heat a stir fry pan and add the oil.

  • Step 2

    Next add the cumin, mustard, red chilies, split peas and urad dal along with the curry leaves.

  • Step 3

    Stir gently and let cook til the dal turns golden.

  • Step 4

    Add the cut plantains and stir to coat the plantains with oil.

  • Step 5

    Continue to keep stirring on medium flame until the plantains slightly change color 2-3 mins.

  • Step 6

    Add the turmeric, chili powder and salt and toss until everything coated evenly.

  • Step 7

    Continue to cook until the plantains turn golden stirring occasionally 5-8 mins.

  • Step 8

    Turn off and serve with rice/wraps or veggie bowls!

  • Step 9

    Tips: 1. Make sure you select plantains which look fully green, firm and have no soft spots. Otherwise you will end up with a very sweet dish! 2. The addition of split peas and urad dal is a way to sneak in protein. Also, I love my stir fries with a crunchy texture and the dals give that texture. 3. Add a tsp of melted ghee/coconut oil to hot rice and mix in the plantains. Will taste amazing! 😋😋
