Vegan Brioche Bread style

ingredients

  • 500 gram all purpose flour
  • 40 gram cornstarch
  • 12 gram instant yeast
  • 50 coconut sugar
  • 1/2 teaspoon salt
  • 200 soy milk
  • 50 gram non-dairy butter
  • 1 lemon juice
  • 80 gram apple compot

Method

  • Step 1

    Pour the soy milk into a bowl and add the lemon juice. Do not mix and let stand aside for about 5 minutes.

  • Step 2

    Meanwhile, put the dry ingredients (except for the salt) in the bowl of the kitchen robot (mixer) and mix.

  • Step 3

    Melt the butter and put it together with the apple compot in the center of the ingredients. Use the hook to stir on low speed.

  • Step 4

    Little by little add « buttermilk » (the mixture of the soymilk with the lemon juice). When the dough takes shape, add the salt.

  • Step 5

    Knead the dough for 15 to 20 minutes until it becomes elastic.

  • Step 6

    Let the dough rise for 45 to 60 minutes in a lightly floured bowl and cover with a clean towel until the dough has doubled in volume.

  • Step 7

    Let the gas out of the dough while kneading for a minute. Shape a ball and let rise again for 45 to 60 minutes.

  • Step 8

    Prepare the baking trays by covering them with greased parchment paper.

  • Step 9

    Lightly flour your workspace area. Roll out the dough to a thickness of 1 to 2 cm. Cut out the shapes using your baking tins or create one with a knife.

  • Step 10

    Divide the molds on the baking plates and cover with a clean towel and let rise one last time for 15 to 30 minutes.

  • Step 11

    Preheat the oven to 225 ° C on the traditional oven mode for the best result (top and bottom heat, try to avoid convection mode).

  • Step 12

    Brush soy milk over the figures with a brush before baking for 8-10 minutes. They should get a nice golden color when they cook.

  • Step 13

    Let the « Klaaskoeken » cool for a few minutes on the baking tray before placing them on a pastry grill to cool further.

  • Step 14

    Eat them the tradionnal way covered with (non-dairy) butter & (vegan) cheese. Don't forget the hot chocolate cup on the side to dip in.

  • Step 15

    Best eaten fresh. Otherwise re-heat them a bit (10 to 20 seconds) in the micro-wave.
