Chocolate Peanut Butter Pudding

  • 1 1/4 cup coconut milk
  • 1 1/4 cup almond milk
  • 2 espresso shots
  • 2 tablespoons peanut butter
  • 8 1/2 tablespoons vegan butter
  • 1/2 cup brown sugar
  • 4 ounces dark chocolate
  • 1/2 cup all-purpose flour
  • Optional: whipped coconut cream, chocolate ganache


  • Step 1

    Place milk, espresso and peanut-butter in a saucepan and heat over medium heat. Whisk together.

  • Step 2

    In another saucepan melt butter over medium heat, then add sugar and chocolate and stir until melted. Sift in flour and stir until completely smooth.

  • Step 3

    Pour the hot milk over the chocolate mixture and simmer for a couple of minutes while stirring.

  • Step 4

    Pour the pudding into a pudding mold and cool completely, in the fridge, for at least 2-3 hours before serving.

  • Step 5

    Serve with whipped coconut cream or with chocolate ganache.
