Oats and Chia Bread

"You can call it banana bread as well, but I'm not doing it on purpose. My daughter truly dislikes banana bread. As soon as she detects the banana, she refuses to taste or eat further. But she is in love with this dessert. The toasted chia and oats give the bread a slightly nutty flavour and extra crunch — a perfect way to start your day or have a cuppa."

ingredients

  • 1 cup rolled oats
  • 1/8 cup chia seeds
  • 2 ripe and mashed bananas
  • 1 cup plain flour
  • 1/4 cup rice flour
  • 1/2 cup agave sypup
  • 1/2 cup olive oil
  • 1 tablespoon cinnamon powder
  • 1 teaspoon baking powder
  • 1 teaspoon apple cider vinegar
  • pinch of salt
  • pumpkin seeds for the top

Method

  • Step 1

    Toast the oats and chia seeds in a frying pan for 3-4 minutes. Still regularly to prevent from burning.

  • Step 2

    Preheat the oven for 175 C degree

  • Step 3

    Mash the bananas in a medium size mixing bowl then add all the remaining ingredient and the oat/chia mixture. Use a wooden spoon to combine then pour the batter into a prepared loaf tin. Sprinkle some pumpkin seed over the top.

  • Step 4

    Bake for 45-50 minutes.
