Almond and Banana Bread

"cannot let the weekend start without a good old banana bread. I particularly like this version as it has a crunchy crumble top and a moist, nutty centre. I used almond milk and ground almond meal to max out the nutrition content. It’s not only a damn good dessert but a banging breakfast too."

Recipe Card

ingredients

  • 1 1/2 cups all purpose flour
  • 1 cup finely ground almond
  • 3 ripe bananas
  • 1/2 cup rolled oats
  • 1/3 cup oil
  • 1/2 cup agave syrup
  • 1/2 cup almond milk
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon vinegar
  • Vanilla extract
  • Pinch of salt

For the crumble top

ingredients

  • 5 1/2 tablespoons margarine
  • 1/2 cup flour
  • 1/2 cup cane sugar
  • 1/2 cup thinly sliced almond
  • 3 teaspoons cinnamon powder

Method

  • Step 1

    Preheat the oven for 365 degree F.

  • Step 2

    Mash the bananas with the fork and mix with all the wet ingredients. Once combined, add all the remaining ingredients and gently mix with a spatula.

  • Step 3

    Pour into a prepared bread baking tray.

  • Step 4

    Crumble the butter, flour, sugar, almond and cinnamon powder together for the top. Sprinkle over the batter and bake for 50-55 minutes.
