Brussels Sprouts with Asiago PDO Fresco Sauce

  • 1 pound Brussels sprouts, cleaned and cut in half
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • 1 cup heavy cream
  • 1 1/2 cups Asiago Fresco PDO, cubed
  • pinch nutmeg
  • 1/4 teaspoon black pepper
  • 2 tablespoons balsamic vinegar


  • Step 1

    Preheat the oven at 400°F degrees. Transfer Brussels sprouts into a baking sheet pan.

  • Step 2

    Drizzle olive oil and season with salt and pepper. Toss well and roast in the oven for 20 minutes.

  • Step 3

    Into a medium saucepan, pour the heavy cream. Let it warm on medium heat for 2-3 minutes and add Asiago Fresco PDO. Stir slowly until the cheese melts completely.

  • Step 4

    Remove from heat and season with nutmeg and black pepper.

  • Step 5

    Remove Brussel sprouts from the oven and transfer to a platter. Drizzle with balsamic vinegar.

  • Step 6

    Serve with cheese sauce. Enjoy!
