ingredients

  • 2 ripe bananas
  • 1 cups rolled oats
  • 1 cups All purpose flour
  • 1 teaspoon baking powder
  • 1/3 cup maple syrup
  • 1/4 cup canola oil (or olive oil in a pinch)
  • 1/4 milk
  • 2 tablespoons plain greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips (optional)

Method

  • Step 1

    Preheat oven to 350 degrees F and oil or butter your bread pan.

  • Step 2

    Mash those bananas until nice and smooth.

  • Step 3

    In a large miking bowl, mix together dry ingredients: flour, baking powder, oats, and salt.

  • Step 4

    In another bowl, whisk wet ingredients oil, eggs, syrup, milk, yogurt, bananas, and vanilla extract until smooth (as smooth as possible with the banana lumps).

  • Step 5

    Add the wet ingredients to the dry and stir until just incorporated (approximately 10 strokes). Add in chocolate chips if you wish.

  • Step 6

    Bake at 350 degrees F for approximately an hour and 15 minutes until top is a nice golden brown and a toothpick inserted into the center comes out clean. This will depend on the oven temperature and pan size.
