ingredients

  • 2 tablespoons olive oil
  • 5 cloves garlic, minced
  • 1 large yellow onion
  • 1 tablespoon salt
  • 1 tablespoon ginger, chopped
  • 1 sweet potato, sliced
  • 2 1/2 quarts chicken stock
  • 1/2 cups brown rice, rinsed
  • 1/4 cups dry white wine
  • 2/3 cup red lentils (rinsed and sorted)
  • 4 bone-in chicken thighs
  • 4 cups curly kale, chopped
  • 1 lemon, juiced
  • 1 tablespoon soy sauce
  • 1 bunch cilantro, for garnish

Method

  • Step 1

    In a large pot over medium heat, add olive oil, onions, salt and garlic, and cook until onions are sweet and translucent, 4-5 minutes.

  • Step 2

    Add ginger, sweet potatoes, chicken broth, wine, chicken thighs, and brown rice. Bring to a simmer and cook covered at a simmer until chicken and sweet potatoes are tender, at least 45 minutes.

  • Step 3

    Add red lentils and cook, covered, for 12-15 minutes or until lentils are fully cooked. Reduce heat to low and add kale, lemon juice and soy sauce. Cook until kale is wilted.

  • Step 4

    Serve topped with fresh cilantro, and enjoy on a chilly day!
