ingredients

  • 1 (9-inch) pre-made pie crust
  • 1 1/2 cups shredded cheese, divided
  • 6 large eggs
  • 1/2 cup sour cream
  • 1/2 cup whole milk
  • 3/4 tablespoon kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon baking soda
  • 2 cups chopped spinach leaves, packed
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped sausage
  • 1/3 cup sundried tomatoes
  • 1/2 cup grated Parmesan cheese

Method

  • Step 1

    Preheat oven to 375°F.

  • Step 2

    Place pre-made pie crust into cast iron skillet, adjusting the shape as needed. Sprinkle 1/2 cup of the shredded cheese on the base, and set aside.

  • Step 3

    In a large bowl, whisk together eggs, sour cream, milk, baking soda, salt, pepper and chili flakes until combined. Add Parmesan cheese and 1/2 cup of shredded cheese and stir to combine.

  • Step 4

    Slowly pour the mixture in to the skillet, and top with chopped veggies, sausage and remaining cheese.

  • Step 5

    Bake until sides are golden brown, 45-50 minutes. Remove from the oven and allow to cool for 15-20 minutes before serving.

  • Step 6

    Slice, top with parsley enjoy!
