Pasta with homemade ragú

  • Garlic, zucchini, shiitake mushrooms, 1 large sweet onion, 1 can of good crushed tomatoes, 1 of of ground lean beef, 1/4 cup of chicken reduction, 1/3 pd of pasta of your choice


  • Step 1

    bring Salty past water to a boil. Chop veggies into large cubes or large dice. Mince garlic. Remove lid from canned tomate.

  • Step 2

    Saute the ground meat. Set aside & discard the fat. Cook the pasta until al dente. Save 1/2 cup of the pasta water. Sauté the veggies in the same pan you cooked the meat, with a teaspoon of olive oil. Cook until al dente. Add the garlic, the chicken reduction & can of crushed tomato. Add the meat & the pasta & toss.

  • Step 3

    I like to add at the end when serving a mixture of grated Parmesan, & Locatelli cheese.
