ingredients
- 1 1/3 cup flour
- 1/4 tablespoon bicarbonate soda
- 1/2 teaspoon cinnamon
- 6 tablespoons butter
- 6 tablespoons brown sugar
- 6 tablespoons treacle(molasses)
- 6 tablespoons golden syrup
- 6 tablespoons honey
- 1/2 cup milk
- 2 eggs
- 7 ounces mascarpone
- 7 fluid ounce cream
- 2 tablespoons light brown sugar
- 1 teaspoon vanila
- figs, for garnish
Method
Step 1
Preheat the oven to 180C / 355F. Prepare the baking tin with baking paper. (My tin is 18x9x6cm)
Step 2
Melt togethre the butter, treacle, syrup, honey and sugar.
Step 3
Shift the dry ingredients into a large bowl.
Step 4
Whisk eggs and milk together.
Step 5
Stir butter mixture and eggs into flour and combine well.
Step 6
Pour into the prepared tin and bake for about 45minutes.
Step 7
Leave it to cool.
Step 8
(if you bake on a day before, wrap with clingflim and store it in a cool place)
Step 9
Make Mascarpone Cream If you are using a stand mixer, put all the ingredients and whip together.
Step 10
If you are whipping by hand, soften mascarpone cheese.
Step 11
If you are whipping by hand, soften mascarpone cheese.
Step 12
Whip the cream with vanilla and sugar.
Step 13
Add 1/2 of cream to mascarpone and mix well, then combine the rest of cream.
Step 14
Decorate the cake with cream and figs.
Step 15
I cut top of the cake and put upsidedown so that you have completly flat serface to pipe.
