ingredients
- 1 packet of Mama's Masalas Lahori Chicken Tikka seasoning
- 2 pounds of skinless bone-in chicken thighs, drumsticks or both
- 2 tablespoons of lemon juice
- 2 tablespoons of distilled white vinegar
- 2 tablespoons of crushed fresh mild green/sweet chilies
- 4 tablespoons of melted ghee or butter
Method
Step 1
Preheat oven to broil (525° F).
Step 2
Score the top of each skinless chicken piece to the bone 5-6 times.
Step 3
Mix Mama's Masalas spice mix with lemon juice, distilled white vinegar, crushed mild green chilies, and 2 tablespoons melted butter or ghee to create a marinade.
Step 4
Pour 1 tablespoon of the marinade on each chicken piece. Spread all over and into the scores. Mix any leftover marinade into chicken pieces. All skinless chicken pieces should be thoroughly covered with marinade on both sides.
Step 5
Grease a baking tray with ghee or butter; place chicken on the tray in a single layer, ½ inch apart, score-side down onto the tray. Place tray on the middle rack of the oven.
Step 6
Broil for 12 min uncovered or until light brown with slight blackening.
Step 7
Turn over each piece (score-side up) and broil for another 12 min or until light brown with slight blackening.
Step 8
Remove tray from the oven, discard any excess drippings. Place chicken in a serving dish and drizzle remaining 2 tbsp warm, melted butter or ghee over chicken. Enjoy!
