Roasted Honeynut Squash

"Recipe from feedfeed:
4 honeynut squash, halved
4 shallots, halved
3 garlic cloves, skin on
bunch of fresh time
1 tablespoon olive oil
salt and freshly ground black pepper

Directions:

Pre-heat over to 400 degrees F.

Combine squash, shallots, garlic and thyme on a baking sheet lined with parchment paper.

Season with salt and pepper and drizzle with olive oil.

Roast for about 30-50 minutes, until squash is tender.
