Steamed Baby Bok Choy with Creamy Miso Dressing

ingredients
- 8 small baby bok choy
- 2 green onions, cut in threads
- 1 tablespoon white miso paste
- 1 tablespoon rice vinegar
- 1 tablespoon mayonnaise
- 1/2 tsp sesame oil
- 2 tsp fried garlic for garnish
Method
Step 1
Make the dressing- In a mini-food processor add the miso paste, vinegar, mayonnaise, sugar and sesame oil and pulse to make a creamy dressing. Add a little water if the dressing is too thick.
Step 2
Steam the Bok Choy- Fill a saucepan with water and place a steamer basket on top. Bring the water to a boil and add the baby bok choy. Steam for 3 minutes just until the bok choy is tender. Remove the bok choy and arrange it on a serving plate.
Step 3
Spoon some of the creamy miso dressing on the bok choy. Garnish with the green onion threads and fried garlic.
