Spicy Chicken Thighs with Roasted Potatoes, Broccolini and Hot Pepper Relish

ingredients

  • 4 chicken thighs
  • 3 red potatoes
  • 2 cloves garlic, minced
  • 1 bunch broccolini
  • 1/2 lemon
  • 1 tablespoon chopped parsley
  • 1 tablespoon cento diced cherry pepper spread
  • 1/4 teaspoon chili powder
  • Cayenne pepper, to taste
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon poultry seasoning
  • 2 tablespoons olive oil

Method

  • Step 1

    Season chicken in cayenne, chili pepper, 2 dashes onion powder, 2 dashes garlic powder, 1/4 lemon wedge, olive oil and marinate for at least 6 hours

  • Step 2

    When ready to cook, start by rinsing potatoes, cutting into large pieces (1/4) and place in small pot of water. Cover pot, and par-cook on stove top on low-medium heat for 15 minutes.

  • Step 3

    As potatoes are cooking, prepare broccolini by rinsing, trimming stems, and placing on a small aluminum lined sheet tray. Season broccolini with olive oil, salt, pepper, and 2 cloves chopped garlic and mix thoroughly

  • Step 4

    Using a caste iron skillet, sear marinated chicken thigh in olive oil on med+ heat for ~3 minutes. Remove chicken from pan once outsides are browned. The objective is just crisp the skin and allow both sides of the chicken to brown, the chicken will finish cooking in the oven.

  • Step 5

    Strain potatoes from the water and place directly in the caste iron the chicken was seared in. Stir around pan, add additional olive oil, salt, pepper, poultry seasoning, onion powder and garlic powder. Place Seared Chicken directly on top of potatoes, than put in oven to cook at 400 degrees for 20 minutes

  • Step 6

    After the chicken has been in the oven for 5 minutes, add broccolini to oven to cook for 15 minutes

  • Step 7

    After 15 minutes has passed (chicken has cooked for 20 minutes total and broccolini cooked for 15 minutes total) take the chicken and broccolini out of the oven.

  • Step 8

    Serve in pan family style - place broccolini directly on top of chicken/potatoes, add the hot pepper relish on top of the broccoli florets, top with parsley and squeeze the remaining lemon wedge over the top
