Roasted Chicken
ingredients
- 1 ea whole chicken
- 2 tabelspoons butter
- 2 tablespoon olive oil
- garlic powder
- onion powder
- salt
- pepper
- 1 lemon
Roast Chicken
Method
Step 1
First, spatchcock the chicken by cutting out the breast bone. Than, lay the chicken down flat on a foil covered pan with the breast side up. Loosen the skin from the chicken with your fingers, and place pieces of butter under the skin.
Step 2
Preheat oven to 425. Than, season the chicken liberally on both sides with olive oil, salt, pepper, garlic powder, onion powder and lemon and allow to rest for 10-15 minutes to bring to room temperature while you are waiting for oven to preheat.
Step 3
Roast on middle rack at 425F for 40 minutes, than lowered to 400F for 15 minutes.
Step 4
When chicken is finished cooking, remove from oven and allow to rest before serving. Serve with Chimichurri on side
Chimichurri
ingredients
- 1/4 cup chopped parsley
- 1 ea minced shallot
- 1 ea minced garlic
- 1 tsp chopped caper
- 4 ea chopped anchovy
- 1/4 cup extra virgin olive oil
- 1 tsp sherry vinaigrette
- 1 tsp rice vinegar
- 1 pinch salt
- 1 pinch pepper
- 1 pinch sugar
Chimichurri
Step 1
To make the chimichurri, mince 1 shallot, 1 small clove of garlic, 3 chopped anchovies, 1 tsp chopped caper, 1/4 c olive oil, 1 tsp sherry vinegar, 1 tsp rice vinegar, salt, pepper, a pinch of sugar and add 1/4 c chopped parsley and mix.
