Gatnabour with Nutella® (Armenian Rice Pudding)

  • 1 cup water
  • 1 cup basmati rice
  • 1/2 cup sugar
  • Pinch of salt
  • 4 cups whole milk
  • 1 teaspoon rose water (optional)
  • 1/2 cup plus 2 tablespoons Nutella®

Method

  • Step 1

    Using a 3-4 quart pot, bring one cup of water to a boil and stir in rice. Cook covered on low heat for 15 minutes. (Rice will have absorbed the water, and be slightly undercooked.)

  • Step 2

    Remove rice and set aside.

  • Step 3

    Clean and rinse the pot before moving on to the next step.

  • Step 4

    Using the same (clean) pot, bring the milk to just under a boil and stir back in the rice.

  • Step 5

    Cook uncovered on medium-low heat, stirring every 5 minutes for 45 minutes until it has thickened.

  • Step 6

    Add in the sugar and salt and continue cooking for an additional 15 minutes. Remember to keep stirring.

  • Step 7

    At this point, the mixture will resemble a slightly runny rice pudding. Remove from heat and stir in rose water (if using).

  • Step 8

    Let cool (or chill in the fridge) and serve in individual-sized portions (about ½ cup) with a tablespoon of Nutella®.

  • Step 9

    Take a little bit of Nutella® with each bite or stir in thoroughly for a dark rice pudding that has the Nutella® evenly distributed throughout.
