Chicken and Girolle Fricasée

  • 4 Chicken thighs
  • 300 gram Girolles
  • 300 gram Chestnut mushrooms
  • 1 Onion
  • 100 gram Smoked pancetta
  • 700 milliliter Chicken stock
  • 3 teaspoons Crème fraîche
  • 3 teaspoons Olive oil
  • 3 Sprigs fresh thyme
  • 2 Cloves garlic


  • Step 1

    Clean your mushrooms by wiping them with a cloth. In a sauté pan warm 2 tablespoons of the olive oil and brown the chicken. Set aside and add the onions to the same pan.

  • Step 2

    When the onions become translucent add the pancetta, the thyme and half of the mushrooms. Cook until the pancetta takes on a nice golden colour. Add the stock, cover and cook for 45 minutes.

  • Step 3

    In another frying pan cook the rest of the mushrooms in 1 tablespoon of olive oil and the garlic. Keep warm.

  • Step 4

    After 45 minutes add to the chicken with the crème fraîche and stir. Cook for 5 minutes and serve with brown rice.
