ingredients
- FOR THE DRESSING
- 2 teaspoons Grey Poupon Mustard
- 1/4 teaspoon Paprika
- 3 tablespoons Olive oil
- 100 milliliter White wine
- Salt and pepper
- TO BAKE
- 2 fillets Cod fillets or halibut (135g each)
- 250 gram Potatoes
- 250 gram Leeks
- 100 gram Feta
- 25 gram Parsley finely chopped
- 1 Lemon unwaxed - sliced
- Olive oil
Method
Step 1
Preheat your oven to 200°C/400°F.
Step 2
Wash and clean your vegetables and fish fillets.
Step 3
Cut the potatoes into quarters and cook in boiling water until soft about 20 minutes. Cut your leeks into thin slices and cook for 10 minutes. Add all the ingredients for the dressing in a bowl and cover the fish completely.
Step 4
In an oven proof dish drizzle a little olive oil and then place the potatoes, the leeks and lay your fish over the top. Cover with crumbed feta and parsley and finish with the lemon slices.
Step 5
Drizzle with olive oil and bake for at 200 c for 17-20 minutes. Serve immediately. Enjoy… Bon appetit! ♥♥♥
