ingredients
- 1 1/4 teaspoons active dry yeast
- 1/2 cup warm water
- 1/4 cup milk
- 2 tablespoons raw sugar
- 2 tablespoons brown sugar
- 2 cups plus 2 tablespoons all purpose flour
- 1/4 cup butter or coconut oil, melted, plus additional for brushing
- 1 tablespoon sour cream
- 2 teaspoons Kosher salt
- 6 cups water
- 1/4 cup baking soda
- cinnamon sugar, for topping
- flaky salt, for topping
Method
Step 1
Add yeast, warm water, milk, and sugar in the bowl of a stand mixer and let sit for 10 minutes or until foamy.
Step 2
Place dough hook onto mixer, add flour, butter, sour cream and salt to the yeast mixture. Knead for 10 minutes.
Step 3
Place an oiled mixing bowl, cover with plastic and put in a warm place for 2-3 hours or until doubled in size.
Step 4
Preheat oven to 450 degrees and place 6 cups of water in a large sauce pan along with baking soda and bring to a boil.
Step 5
Place parchment paper on a large baking sheet, turn dough into a floured surface and cut into 4 for large pretzels, or 8 pieces for smaller ones . Hand pull each piece into a 12-18 inch rope. Gently stretch. Wrap each end towards the middle into a pretzel and pinch the ends. You can cross them or double twist prior to joining and pinching the ends.
Step 6
Place 1 pretzel, top side down into water, and boil for 30 seconds. Remove with spatula and place top side up on baking sheet. Repeat with the rest. Add toppings prior to baking. Bake for 12-14 minutes.
Step 7
Remove from the oven and immediate brush with melted butter. If you are making cinnamon sugar, you will dip it in here. If not, top with flaky salt.
Step 8
Optional: cut into 8 pieces to make smaller ones. Cut ropes to make pretzel bites
