ingredients

  • 2 large egg whites
  • 1/2 cup caster sugar
  • 1/2 teaspoon vanilla extract
  • Non pareils or sprinkles

Method

  • Step 1

    Preheat the oven to 215℉. Line a baking tray with parchment paper.

  • Step 2

    Using an electric handheld or stand mixer, beat egg whites on high speed until soft peaks form. Slowly, add caster sugar, a spoonful at a time, whisking on high continuously until stiff peaks form. Add vanilla extract and beat until combined.

  • Step 3

    Fill a large piping bag fitted with a large petal piping tip with the meringue mixture. Pipe the meringue trees by zigzagging backward and forwards until you have a tree shape.

  • Step 4

    Sprinkle each meringue tree with sprinkles or non-pareils. Bake for 45 minutes or until you can lift the meringue from the parchment paper and the bottom is crisp. Turn the oven off and leave to cool in the oven for 1 - 2 hours.
