No Bake Pumpkin Spice Caramel Bars

  • 2 1/2 cups pitted dates
  • 1/4 cup raw almond butter
  • 1/2 teaspoon pumpkin pie spice
  • 1 pinch sea salt
  • 1 cup Chopped dark chocolate
  • 1 tablespoon melted coconut oil


  • Step 1

    Puree the dates in a food processor until a sticky ball is formed (add a tbsp warm water if it isn't coming together). Scrape down the bowl, and add almond butter, pumpkin spice and sea salt. Pulse until combined.

  • Step 2

    Line an 8x8 baking dish with parchment paper. Press the mixture evenly into the dish. Drizzle some extra raw almond butter over the top. Place in the freezer.

  • Step 3

    Melt chocolate (30 second increments until smooth) and stir in the coconut oil. Drizzle evenly over the top of your chilled "caramel" and place in the fridge for 1 hour before slicing. Store in the fridge.
