Spinach & Olive Hand Pies

ingredients

  • 1/2 cup golden raisins
  • 1 (10-ounce) bag frozen chopped spinach
  • 2 pre-made pie crusts
  • 1 egg, beaten with 1 teaspoon of water
  • 1/3 cup kalamata olives, minced
  • 1/3 cup diced white onion
  • 1 large garlic clove
  • 2 tablespoons olive oil, divided
  • Pinch of red pepper flakes
  • Grated Parmesan cheese, for garnish
  • Kosher salt and pepper, as needed

Method

  • Step 1

    Add 1/2 cup of Sun-Maid golden raisins to bowl cover with hot water and let sit for 30 minutes. This will plump up your raisins.

  • Step 2

    Microwave frozen spinach according to package instructions. Add spinach to a thin tea towel and wring out any excess moisture.

  • Step 3

    Heat sauté pan to medium heat. Add 1 tablespoon of olive oil. Add sliced garlic and pinch of red pepper flakes. Cook garlic until fragrant then add diced onions. Season with salt and pepper. Cook onions 3-4 minutes or until translucent. Add spinach and reserved tablespoon of olive oil. Mix.

  • Step 4

    Then add olives and raisins. Mix again. Taste and add salt and pepper to taste. Remove from heat.

  • Step 5

    Preheat oven to 400°F. Line pan with parchment paper.

  • Step 6

    Roll out the pre made pie crusts. Cut out 16 circles, measuring 3 1/2 inches wide each. (I was able to cut 7 from one pie crust then I gave the excess dough a quick roll and cut one more making a total of 8 circles per pie crust.)

  • Step 7

    Brush the bottom circle with egg wash. Add 2 tablespoons of spinach mix to center of circle, leaving room around the edges to close your hand pie. Sprinkle with grated Parmesan cheese.

  • Step 8

    Cover with top. Use fork to close the sides. Make a slit on the top of hand pie and brush with egg wash. Continue until all hand pies are made.

  • Step 9

    Top with a sprinkle of Parmesan cheese and salt + pepper. Bake 12 - 15 minutes, until you have a nice golden brown color.

  • Step 10

    Remove from the oven and allow to cool for at least 5 minutes. Enjoy!
