ingredients
- 3 cups diced Heirloom potatoes
- 1/2 cups diced Sweet onion
- 1 cups Cubanelle peppers
- 4 cloves peeled and minced Garlic
- 2 pieces crumbled Beyond meat sausage
- 2 tablespoons Olive oil
- 1/2 teaspoon Beast Prep Spice Blend
- 1/4 cup minced Spinach
Method
Step 1
In a large saucepan heat olive oil over medium heat and add potatoes toss to coat and let cook 5-10 min. Sprinkle with beast prep spice blend.
Step 2
Add onions and peppers and toss. Add 2-3tbl water and mix to aid potatoes in cooking. Cook another 5-10 min and add garlic.
Step 3
While the mixture is cooking in a separate small frying pan add the crumbled beyond meat sausage and heat over medium heat until browned. Taste the potato mixture to be sure potatoes are cooked through. Once potatoes are tender add the sausage and oils it has released into the potatoes and mix thoroughly. Garnish with minced spinach and serve hot.
