Breakfast Parfaits Two Ways
Crust:
1/3 cup chickpea flour (or any nut flour)
1/4 cup ghee (or butter or coconut oil)
3 tbsp sticky sweetener like honey, maple syrup or agave
2 cups nuts (whatever is your favourite)
Toppings: Yogurt, peanut butter, berries, kiwi, pomegranate, cherries or whatever you like!
For the Crust:
Place all ingredients into a food processor and pulse until a dough forms.
For Muffins:
Line a muffin tin with cupcake liners and wet your hands. Press the dough into the cupcake liners to form a crust. Bake at 350F degrees for about 10 - 12 minutes. Let them cool and then fill them with yogurt and your favorite toppings.
For Pizza:
Shape dough into a disc ( it's helpful to place the dough between two pieces of parchment paper) and use a spatula to smooth the edges. Bake at 350F degrees for about 17- 20 minutes. Allow to cool for about 10 minutes. Top with yogurt and fruit. Enjoy!
