Skillet Kale And Eggs With Chili Oil And Lemony Greek Yogurt

ingredients
- 3 handfuls of kale
- 5 eggs
- 1 cup greek yogurt
- 2 teaspoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons olive oil
- 1/4 teaspoon chili flakes
- 1/2 teaspoon smoked paprika
- Dill, for garnish
- Salt and Pepper to taste
Method
Step 1
In a large pan, cook 3 handfuls kale over medium until soft. Make 5 wells and break 1 in each & cook for 7 minutes.
Step 2
Meanwhile, whisk together Greek yogurt, lemon juice & zest, sea salt & freshly ground black pepper. Whisk olive oil with chilli flakes and smoked paprika.
Step 3
When the egg whites are just set, remove from the heat, spoon the yogurt over the eggs and drizzle with the spicy oil. Garnish with dill sprigs and serve with crusty bread.
