Zucchini And Mushroom Flat Bread Pizza

So I had pizza. For brunch. Best idea ever? Flatbread pizza with zucchini & mushroom and basil<3 -@thesunshineeatery

For the Dough


  • 2 cups whole wheat flour
  • 1 (1/4 ounce) packages active dry or instant yeast
  • 3/4 teaspoons salt
  • 1 cup warm water
  • 1 tablespoon olive oil

For the Pizza Sauce


  • 1/2 cup plus 2 tablespoons tomato puree
  • 1 tablespoon Italian seasoning
  • Salt, to taste

For the Toppings


  • Cooked mushrooms
  • Fresh basil
  • Zucchini slices


  • Step 1

    Dissolve the yeast in the warm water to activate. Add wet ingredients to dry and knead until a nice dough comes together. Cover and let it rest for at least 30 mins to an hour until the dough has doubles in size.

  • Step 2

    Preheat oven to 425˚F. Once risen, stretch dough into desired shape and add your pizza sauce and toppings of choice. Cook for about 10-15 minutes, or until crust begins to turn golden brown.
