ingredients

  • 12 ounces fillet Salmon
  • 9 ounces fresh Asparagus, ends trimmed
  • 3 tablespoons Mayonnaise
  • 3 tablespoons fresh Lemon Juice
  • 1 tablespoon Honey
  • 2 tablespoons extra virgin Olive Oil
  • 1/4 teaspoo granulated Garlic
  • 1 teaspoon wholegrain Wholegrain Mustard
  • 1 tablespoon Finely Grated Lemon Zest
  • 1/4 teaspoon Paprika
  • 1 Pinch of Salt
  • 1 Pinch of Pepper

Oven-Baked Salmon

Method

  • Step 1

    Preheat the oven

  • Step 2

    Line a flat oven tray with aluminium foil and place the salmon

  • Step 3

    In a small bowl mix: one tablespoon of olive oil, honey, 1 tbsp of lemon juice, granulated garlic, ¼ tsp of salt and ¼ tsp pepper until it becomes a smooth paste.

  • Step 4

    Spread the paste on top of the salmon fillet. Place the tray in the middle rack of the oven and cook for 18 minutes

Asparagus

  • Step 1

    Remove wordy ends

  • Step 2

    Trim it into small pieces, around 2 inches each

  • Step 3

    Over medium-high heat, in a frying pan preheat a tablespoon of olive oi

  • Step 4

    Add the asparagus and season with ¼ tsp of salt and ¼ tsp of pepper. Cook for around 6 minutes, until it browns

Lemony Sauce

  • Step 1

    In a small bowl, mix the mayonnaise with mustard, lemon juice, ¼ tsp of salt, ¼ tsp pepper, ¼ tsp of paprika and the finely grated lemon zest

  • Step 2

    Stir well, until a homogenous sauce forms

  • Step 3

    By this time the salmon must be cooked. Divide it, along with asparagus on two plates and sprinkle with the Lemony sauce
