ingredients
- 12 ounces fillet Salmon
- 9 ounces fresh Asparagus, ends trimmed
- 3 tablespoons Mayonnaise
- 3 tablespoons fresh Lemon Juice
- 1 tablespoon Honey
- 2 tablespoons extra virgin Olive Oil
- 1/4 teaspoo granulated Garlic
- 1 teaspoon wholegrain Wholegrain Mustard
- 1 tablespoon Finely Grated Lemon Zest
- 1/4 teaspoon Paprika
- 1 Pinch of Salt
- 1 Pinch of Pepper
Method
Oven-Baked Salmon
Step 1
Preheat the oven
Step 2
Line a flat oven tray with aluminium foil and place the salmon
Step 3
In a small bowl mix: one tablespoon of olive oil, honey, 1 tbsp of lemon juice, granulated garlic, ¼ tsp of salt and ¼ tsp pepper until it becomes a smooth paste.
Step 4
Spread the paste on top of the salmon fillet. Place the tray in the middle rack of the oven and cook for 18 minutes
Asparagus
Step 1
Remove wordy ends
Step 2
Trim it into small pieces, around 2 inches each
Step 3
Over medium-high heat, in a frying pan preheat a tablespoon of olive oi
Step 4
Add the asparagus and season with ¼ tsp of salt and ¼ tsp of pepper. Cook for around 6 minutes, until it browns
Lemony Sauce
Step 1
In a small bowl, mix the mayonnaise with mustard, lemon juice, ¼ tsp of salt, ¼ tsp pepper, ¼ tsp of paprika and the finely grated lemon zest
Step 2
Stir well, until a homogenous sauce forms
Step 3
By this time the salmon must be cooked. Divide it, along with asparagus on two plates and sprinkle with the Lemony sauce
