"I have to admit, ever since I went vegan I did not like Chia pudding. At all. But about a few weeks ago I gave it another go (don't ask me why π) and I was positively surprised! Soo good! It's sometimes really funny how you despise certain food and then all of a sudden you begin to just like it π

ingredients
- 1 cup oat milk
- 1/4 cup chia seeds
- 1 tablespoon maple syrup, or sweetener of choice
- 2 tablespoons popped quinoa, plus more as needed
- Red currants
- Almond butter
Method
Step 1
Whisk together oat milk, chia seeds, and maple syrup. Let sit for 10 minutes.
Step 2
Put the popped quinoa and a handful of red currant in the bottom of 2 jars. Divide the chia pudding between them and whisk again. Top with more popped quinoa, red currants, and almond butter.
