ingredients
- Olive Oil, as needed
- 1/2 bag Cascadian Farm Organic Cut Green Beans
- 1/2 bag Cascadian Farm Organic Sweet Peas
- 1 Shallot, diced
- 2 spoonfuls of Butter
- 2 spoonfuls of Cascadian Farm Organic Mirepoix
- 1 bag Cascadian Farm Organic Riced Cauliflower
- Parmesan cheese, as needed
- 14 ounce Salmon, cubes
- Salt, to taste.
- Black Pepper, to taste.
- Tomatoes, as needed
- Basil, as needed
- Microgreens, as needed
Method
Step 1
Heat olive oil in a skillet. Add green beans, sweet peas, and shallots. Cook until softened. Transfer to a blender, add butter, salt and pepper and blend until smooth.
Step 2
Heat olive oil in a skillet. Add mirepoix, cooking until softened. Add riced cauliflower, and cook until warmed through.
Step 3
Combine cauliflower mixture, green sauce and Parmesan.
Step 4
Season salmon with salt and pepper. Grill until desired degree of doneness.
Step 5
Spoon creamy cauliflower rice on the plate, top with salmon, tomatoes, basil and microgreens.
