For the Chicken:
ingredients
- 1/4 cup vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 2 tablespoons Old Bay seasoning
- 4 boneless skinless chicken breasts, pounded to even thickness
For the Crab Spread:
ingredients
- 1/4 cup mayonnaise
- 1/4 cup cream cheese, softened
- 1 1/2 teaspoons Old Bay seasoning
- squeeze of lemon juice
- 1/2 pound lump crab meat
For the Sandwich:
ingredients
- 4 slices Finlandia Cheddar Gruyere Cheese
- lettuce, for serving
- tomato, sliced, for serving
- 4 buns, toasted if desired, for serving
Make the Marinade:
Method
Step 1
Combine vegetable oil, vinegar, mustard and Old Bay in a large mixing bowl or freezer bag. Add chicken, toss to combine.Refrigerate for at least 30 minutes or longer (overnight is great!)
Make the Crab Spread:
Step 1
Mix together mayonnaise, cream cheese, Old Bay and lemon. Gently fold in crab meat (avoid breaking up the crab).
Grill the Chicken:
Step 1
Preheat grill to medium-high heat.
Step 2
Remove chicken from marinade. Grill chicken for 5-7 minutes on each side. In the last few minutes of cooking time, spoon crab spread on top of chicken. Top with Finlandia Cheddar Gruyere Cheese. Cover and cook for an additional 3-5 minutes (or until the chicken reaches 160º and the cheese is melted.)
Assemble the Sandwich:
Step 1
Place lettuce and tomato on the bottom bun, top with chicken and other half of the bun.
