This fast pizza recipe is a great way to use up leftover ingredients; this uses pesto, chicken breast, and bacon-change it up depending on what you have on hand. The best part is the dough can be used immediately.

ingredients

  • 1 batch quick rise pizza dough
  • 1/3 cup pesto
  • 1 chicken breast, cooked and cut into cubes
  • 3 strips bacon, cooked & chopped
  • 1/2 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, torn or grated
  • 1/3 cup grated parmesan cheese
  • 8 fresh basil leaves

Method

  • Step 1

    Preheat the oven to 550°F.

  • Step 2

    Make pizza dough according to recipe.

  • Step 3

    Roll out dough and begin to assemble pizza on a pizza stone or baking sheet.

  • Step 4

    Spread pesto over the entirety of the pizza leaving half an inch at the edges for the crust. Brush edges with olive oil or butter.

  • Step 5

    Top with chicken, bacon, cherry tomatoes, mozzarella, and parmesan.

  • Step 6

    Bake for 8 minutes or until edge of crust is browned and center is fully cooked.

  • Step 7

    Remove from the oven and allow to cool for one minute. Top with fresh basil and red pepper flakes. Serve immediately.
