S'mores Ice Cream Bars

"From Tiffany's Kitchen...... S'mores and Ice cream for me are my favorite summer treats! I got creative this weekend and did an inside out smore with ice cream in the middle. I let my ice cream melt so I could evenly spread it into a casserole dish then put it back in the freezer to set. When the ice cream was back to solid form, I cut a square and placed two @ghirardelli squares around it. I placed it back in the freezer to set while I made the marshmallow frosting. I mixed marshmallow fluff, room temp butter and confectionery sugar until smooth. I dipped just the corner of the ice cream sandwich and sprinkled ground graham cracker on the courner. I place it back in the freezer until dessert time. They were so delicious and perfect for a hot summer day.
