"There is one organic vendor at the farmer's market, that I visit every Sunday, and he has the most beautiful greens ?, that get over in a matter of a couple of hours of opening. This vendor is always my first stop at the market, and I love getting all my greens/eggs/beets/carrots from here! I got lovely bunches of spinach and kale, and decided to make Paneer Kofta(cottage cheese balls) in Green Gravy for dinner. Green gravy is made of a puree of spinach/kale/heavy cream with sauté of onion/ginger/garlic/tomatoes and a ground paste of cashewnuts/poppy seeds/cumin seeds/cinnamon/cloves/black peppercorns/cardamom seeds and spices like turmeric/red chilli powder. The paneer koftas are simply paneer/potatoes/cilantro/salt/cumin seeds. Absolutely delicious, healthy, nutritious meal with rice or rotis, and we opt for fresh homemade rotis!
