Mini Strawberry Basil Galettes

  • 2 puff pastry sheets
  • Strawberry Mixture:
  • 1 pound strawberries, sliced
  • 1/3 cup stevia
  • 1 teaspoon vanilla extract
  • zest and juice of 1/2 lemon
  • Cream Cheese Mixture:
  • 1 8 oz container vegan cream cheese or regular if not vegan, at room temp.
  • 2 tablespoon maple syrup
  • 2 tablespoon confectioners sugar
  • Small handful of fresh basil leaves


  • Step 1

    Preheat oven to 350℉ and line a baking tray with parchment paper.

  • Step 2

    Mix together the strawberries, stevia, vanilla extract, lemon juice and zest in a bowl. Set aside.

  • Step 3

    To make the cream cheese mixture combine the cream cheese, maple syrup, and confectioners sugar in a bowl. Mix.

  • Step 4

    Roll out and divide each puff pastry sheet into six even pieces. Roll each piece out into a circle on a lightly floured surface.

  • Step 5

    Divide the cream cheese mixture between the puff pastry circles.

  • Step 6

    Then spoon the strawberry mixture on top of the cream cheese mixture. Save 1/4 of the cream cheese mixture for later.

  • Step 7

    Gently fold up the edges of the fruit and pleat it to stop all the juices running out.

  • Step 8

    Divide the remaining strawberries and fill the remainder of the tarts. Brush each tart using melted butter.

  • Step 9

    Sprinkle over some sugar then place in the oven and bake for 15-20 minutes or until the pastry is turning golden brown.

  • Step 10

    Once cooked remove from the oven and carefully transfer to a wire rack to cool. Allow to cool slightly, then sprinkle with basil leaves and serve! .
