For the Pancakes

ingredients

  • 1 cup all purpose flour
  • 2/3 cup oat flour
  • 1 tablespoon baking powder
  • 2 tablespoons coconut oil
  • 3 tablespoons maple syrup
  • 2 tablespoons apple sauce
  • 1 pinch salt
  • 1 tablespoon vanilla paste

To Make the Pancakes

Method

  • Step 1

    Mix all ingredients except flour in in the blender. Once everything is mixed add the flours, being careful not to over mix.

  • Step 2

    Heat a lightly oiled pan on medium heat. Use a ladle to pour equal size pancakes onto the pan. Cook until bubbling around the edges, then flip and continue cooking until golden.

For the Roasted Peaches and Berry Sauce

ingredients

  • 3 whole peaches
  • 1 cup mixed berries
  • 1 tablespoon vanilla paste
  • 1 tablespoon sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon lemon juice
  • 1 tablespoon coconut oil
  • 1 package maple cotton candy, optional for garnish

To Make the Roasted Peaches and Berry Sauce

  • Step 1

    Cut the peaches and place them on a hot cast iron pan with 1 tablespoon of coconut oil. Cook them on both sides so they get a nice char. Set aside. In the same pan on medium heat add berries , sugar, lemon juice, vanilla paste and maple syrup. Cook for 3 minutes on medium, until thickened.

  • Step 2

    Serve the pancakes with the peaches and berry sauce on top, garnish with edible flowers and maple cotton candy.
