For the Pickled Onions

  • 1 small red onion, sliced
  • 1 tablespoon sugar
  • 1 cup water
  • 2 tablespoons rice vinegar
  • 1 pinch salt

To Make the Pickled Onions


  • Step 1

    Place the onions in a mason jar. In a small pot add water, rice vinegar, sugar, and salt. Bring to a boil, then turn off and pour over onions , let it cool down close mason jar and put in the fridge for up to 1 week.

For the Avocado Toast

  • 1 large avocado, chopped
  • 1/ 2 lemon, juiced
  • 1 teaspoon hemp seeds
  • 2 tablespoons minced parsley
  • 1 teaspoon salt
  • 1 teaspoon capers
  • 2 slices bread, toasted

To Make the Avocado Toast


  • Step 1

    Cut & peel the avocado and place inside a bowl. Add the lemon juice, salt and parsley, then mash with a fork. Spread over the toasted bread, top with hemp seeds, pickled onions , capers & edible flowers.
