Grilled Peach and Buratta Salad with Honey Pecan Vinaigrette

  • 2 whole yellow peaches, halved and pitted
  • 1/4 cup balsamic vinegar
  • 4 tablespoons honey
  • 4 cups mixed salad greens
  • 8 ounces buratta cheese
  • 1/4 cup honey vinegar
  • 1/2 cup olive oil
  • 2 tablespoons chopped pecans
  • 2 sprigs lemon thyme
  • 1 pinch salt and pepper


  • Step 1

    Add the balsamic vinegar and honey to saucepan. Simmer for 10-15 until the mixture is reduced.

  • Step 2

    Glaze the inside of each peach half and place on the grill over medium heat. Grill each side for 4-5 minutes.

  • Step 3

    Plate salad greens and add burrata cheese.

  • Step 4

    Add the vinegar, olive oil, pecans, thyme leaves, salt and pepper to a blender or food processor and blend until completely smooth. Add more salt and pepper to taste.

  • Step 5

    Slice peaches and add to the greens. Drizzle vinaigrette over the salads and enjoy!
