I finally figured out the recipe for these, they are so good, I feel almost guilty giving you the recipe☀️✌️ Side note: if you hate banana: Replace the banana with 2 tbsp ground flaxseeds or 1 tbsp chia seeds mixed with equal parts water and 1 tbsp coconut oil 😏 or simply use 1/3 cup mashed pumpkin"

These fluffy buckwheat pancakes are what breakfast dreams are made of.. Wonderfully fluffy, naturally sweetened and drizzeled in maple syrup and nut butter.

ingredients

  • 1 cup buckwheat or oat flour
  • 1 ripe banana
  • 2 tablespoons aquafaba
  • 3/4 cup plant milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar

Method

  • Step 1

    Blend the buckwheat or oats until fine or resembles flour. Mash the banana until almost liquid, and add the flour and remaining ingredients. Cover the mix and leave in the fridge for an hour or overnight.

  • Step 2

    When you’re ready to make them, bring a pan to a medium high heat, heat a small amount of virgin coconut oil and drop 1 heaped tablespoon of batter to the pan. Allow to cook / bubble before flipping.

  • Step 3

    Serve with tahini or macadamia it butter and maple syrup or add crushed dark chocolate to the mix, you won’t regret!
