Sheet Pan Nachos with Pico de Gallo, Red Beans, Queso Fresco and Avocado

  • 1 (5 oz) Bag Tortilla Chips
  • 1/2 cup prepared salsa con queso
  • 1/2 grated cheddar cheese
  • 1/2 cup cooked and shredded chicken
  • 1/2 cup chopped bell peppers
  • 1/4 small red onion diced
  • 1/2 cup drained and rinsed kidney beans
  • 1/2 cup pico de gallo
  • queso fresco, avocado, fresh lime and microgreens, for serving


  • Step 1

    Preheat the oven to 350˚F. Add the tortillas to a sheet pan and top with salsa con queso, cheddar cheese, chicken, peppers and onion. Bake for about 10 minutes, or until cheese is bubbly.

  • Step 2

    Add kidney beans, pico de gallo, then garnish with queso fresco, avocado, lime juice and microgreens (if desired).
