RECIPE: Shrimp 1 1/2 lbs shrimp, cleaned & deveined 1 c vegetable oil 1/2 c flour or rice flour 1/2 c cornstarch 2 eggs 1 c buttermilk Salt & Pepper Dash hot sauce Flour tortillas Cabbage slaw (recipe below) Bang Bang Sauce 1/4 c mayo 2 tbsp sweet chili sauce 2 tbsp sriracha 2 tbsp garlic, chopped Start by making the Bang Bang Sauce. Mix all ingredients together and put in refrigerator until shrimp are fried. Once the mayo is ready mix the flour and cornstarch together in a small shallow bowl (I use a pie pan) then add some salt & pepper. Take another small shallow bowl and add the buttermilk, eggs, dash hot sauce (however much you prefer) and salt & pepper. Wisk until throughly mixed together. Melt the oil over med high heat until it reaches a temperature of 350 degrees. While oil is heating start dredging the shrimp first in the flour/cornstarch mixture then into the egg/buttermilk mixture. Repeat the breading once more. Then add the shrimp directly into oil. Fry for 2-3 mins until the shrimp is golden brown outside but pink inside. After all the shrimp is fried toss in the Bang Bang Sauce and put in flour tortillas with cabbage slaw. Cabbage Slaw 1 1/2 c red cabbage, shredded 1/2 c red onion, sliced 2 tbsp garlic, chopped 1/2 c cilantro 1 lime, juiced 1 tbsp olive oil Mix all ingredients together to let flavors marinate and serve. Grilled Mahi Mahi Tacos w/ Chipotle Crema Tacos 2 lbs Mahi Mahi 2 tbsp olive oil 2 limes, juiced 2 tbsp garlic, chopped Salt & Pepper Flour tortillas Chipotle Crema (recipe below) Start by putting fish in a shallow pan or baking sheet. Add olive oil, lime juice, garlic, and salt & pepper. Let marinate for atleast 20 mins or all night. When ready to grill take the fish out of the pan and add on a preheated grill. Grill for 10-15 mins turning half way through depending on the thickness of fish. Flake fish into tortillas and add cabbage slaw with some of the chipotle crema. Chipotle Crema 1/4 c mayo 1/2 c sour cream 2 chipotles in adobo, chopped finely Stir all ingredients together until throughly mixed.
