These easy chicken tacos are an easy and delicious meal that can be made with boneless, skinless chicken breasts, taco seasoning, and enchilada sauce in a slow cooker. After cooking for several hours, the chicken becomes tender and easily shreddable, perfect for use in tacos, burritos, or any other Mexican-inspired dish.

  • 2 boneless, skinless chicken breast
  • 1 onion, chopped
  • 1 teaspoon paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/4 cup red enchilada sauce
  • 2 tablespoons red hot pepper
  • Tortillas, warmed for serving
  • Cilantro, for serving
  • Shredded cheese, for serving
  • Lime juice, for serving


  • Step 1

    Pat dry the chicken breast and add to slow cooker. Add onion, seasonings, enchilada sauce and lime juice. Cook on high for 3 hours.

  • Step 2

    Shredded the chicken and assemble the tacos.

  • Step 3

    Bake the tacos at 450 degrees F for 10-15 minutes until the tortillas are crispy and cheese is melted.
