Roasted Cauliflower Topped With A Fried Egg

Ingredients

1 head cauliflower, cut into florets

1 tbsp olive oil, plus more for eggs

salt and freshly ground black pepper

2 handfuls of spinach or greens of choice

2 eggs

Directions

Preheat the oven to 400˚F. Add the cauliflower to a baking tray and drizzle with olive oil and salt and pepper.  Add to oven and roast for about 20-30 minutes or until caramelized. 

When cauliflower is done, heat a medium skillet over medium heat and add a touch of olive oil to pan (or use fat of choice). Add eggs and fry for about 4-5 minutes, or until white is set and yolk is done to your liking. 

Set greens in a bowl, top with the roasted cauliflower and egg and enjoy!
