ingredients

  • 2 Egg Replacer
  • 1 cup Olive Oil
  • 2 teaspoons Vanilla
  • 2 cups Dairy Free Milk (I used almond milk)
  • 2 cups Oat Flour
  • 2 cups Tapioca Flour
  • 2/3 cup Truvia
  • 2 tablespoons Baking powder
  • 1 cup Old Fashioned Oats
  • 1 cup Chocolate Chips

Method

  • Step 1

    Preheat the oven to 350.

  • Step 2

    Line 2 muffin tins of 12.

  • Step 3

    Place eggs replacer, oil, vanilla and milk into an electric mixer. Beat on medium until just combined.

  • Step 4

    Add flours, sugar and baking powder and beat on low speed until just combined. Don't overmix.

  • Step 5

    Add oats and chocolate chips and mix in with a spatula.

  • Step 6

    Pour batter into prepared tins and bake for 20-25 minutes. Enjoy!!
