  • 1/3 cup coconut oil
  • 1/2 cup pure maple syrup
  • 2 large eggs
  • 1 cup pumpkin purée
  • 1/4 cup orange juice
  • 1 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon fine sea salt
  • 1 1/2 cups sprouted spelt flour
  • 1/2 cup dark chocolate chips, plus more for sprinkling on top ⠀


  • Step 1

    Preheat the oven to 325℉ and line a 9" x 5" loaf pan with parchment and lightly coat with nonstick spray.

  • Step 2

    Whisk together coconut oil, maple syrup, eggs, pumpkin spice, orange juice, pumpkin spice, baking soda, vanilla, and salt. Add the flour and stir until just combined. Fold in the chocolate chips.

  • Step 3

    Pour into the prepared loaf pan, sprinkle some more chocolate chips on top, and bake for 50-55 minutes or until a toothpick inserted in the center comes out clean! Let cool completely. ⠀
