Tandoori Roasted Sweet Potatoes

No matter what the time of year, sweet potatoes are one of the best side dishes ever. Loads of potassium (key for muscle repair) and Vitamin A (for healthy bones) make them a key component of an athlete's diet.

Ingredients: 
3-4 sweet potatoes
2 T Tandoori spice mix (from last weeks post)
2 T maple syrup
2 T olive oil
Cut two to three sweet potatoes into wedges and place in a bowl. Drizzle with a couple of teaspoons of olive oil, and 2 tablespoons of the tandoori spice, and two tablespoons of maple syrup. Roast in a 400 degree oven for about 22 minutes or until tender.
