ingredients

  • 1 cup whole wheat flour
  • 1 cup plain flour
  • 1/2 cup buckwheat flour (or oat flour)
  • 4 tablepoons corn flour
  • 1/2 cup cane or coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • sea salt
  • 3/4 cup plant based milk
  • 2 medium bananas
  • 2 tablespoons flax meal
  • 5 tablespoons warm water
  • 1/2 cup sunflower oil (or any neutral oil)

Chocolate Swirl

  • 1/4 cup cacao powder
  • 1/3 cup hot water

Method

  • Step 1

    Preheat oven to 350ºF. Line and grease a 9 inch loaf tin. Combine the water and flax meal to create an egg-like consistency.

  • Step 2

    In a large mixing bowl, combine flours, baking powder, baking soda, salt, sugar, cinnamon. Mix well.

  • Step 3

    In a high speed blender add milk, banana, flax egg, vanilla, and oil. Blend until smooth. Add the wet mixture to the dry ingredients and mix until just combined (being careful not to over mix).

  • Step 4

    Divide batter into two bowls. Whisk together cacao and hot water in a small bowl and add into one half of the batter. Mix to combine.

  • Step 5

    Dollop batters into loaf pan one at a time. Use a chop stick or knife to swirl the two together to create the marbled pattern. Bake for 1 hour until the loaf is firm to the touch and a tooth pick inserted inside comes away clean. Allow to cool completely before slicing and serving.
