Burgers:

ingredients

  • 6 large eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons heavy cream
  • 1/2 cup fresh chives, chopped
  • 2 tablespoons olive oil
  • 3/4 pounds ground breakfast sausage
  • 4 slices American cheese
  • 4 brioche buns, toasted
  • Arugula, for serving
  • 1 medium red onion, thinly sliced for serving

Sweet & Spicy Tomato Jam:

ingredients

  • 1 1/2 tablespoons olive oil
  • 4 medium tomatoes, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon turmeric
  • 2 teaspoons hot paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground coriander
  • 2 tablespoons red wine vinegar
  • 1/3 cup light brown sugar
  • Kosher salt and freshly ground black pepper, to taste

Burgers:

Method

  • Step 1

    Preheat the oven to 350 F. Grease a ¼ sheet pan or 8x8 baking dish with nonstick cooking spray. Cut four 4’’ parchment squares and set aside.

  • Step 2

    In a large bowl, mix eggs, salt, pepper, heavy cream, and chives. Pour the egg mixture into the pan and bake for 12 to 15 minutes, or until the center is set.

  • Step 3

    While the eggs are baking, divide the pork into four evenly sized portions. Form each portion into a ball and set aside.

  • Step 4

    Place a cast-iron griddle over medium heat and add in oil. Once the oil begins to shimmer, Place the pork balls and place parchment paper over the meat and gently press down with the bottom of a meat weight, jar, or spatula. Press down the meat until the patties are as thin as possible.

  • Step 5

    Cook on each side for 3 to 4 minutes, or until the patties are fully cooked in the center. Once the patties are flipped once, add the slices of American cheese. Remove from the heat once the cheese has melted.

  • Step 6

    Once the eggs are cooked, evenly slice into 4 pieces. Begin to assemble the sandwiches, by adding a spoonful of tomato jam onto the bottom of each brioche bun. Top with arugula, sausage patty, cooked eggs, red onion, and an additional spoonful of tomato jam.

Sweet & Spicy Tomato Jam:

  • Step 1

    Place a medium saucepan over medium heat and add in olive oil. Once the oil begins to shimmer, add in the tomatoes, garlic, turmeric, paprika, cinnamon, coriander, vinegar, sugar, salt, and pepper.

  • Step 2

    Stir the ingredients together and bring to a simmer. Cook for 15 to 20 minutes, while stirring occasionally. Remove from heat once it reaches a jam-like consistency and the tomatoes are soft. Note: Serve tomato jam warm, or store in the fridge for up to 5 days.
