ingredients
- 1 mini watermelon
- 1 honeydew
- 1 cantaloupe
- 8 thin slices of prosciutto
- 16 mini mozzarella balls
- 16 fresh mint leaves (large)
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon honey
- Flaky salt and red pepper chili flakes, for garnish
Method
Step 1
Half melons, scrape out seeds, and using a melon baller, scoop out ~16 balls per melon.
Step 2
To assemble skewers, add 1 watermelon ball, 1 mint leaf wrapped around a mozzarella ball, a cantaloupe ball, 1/2 a slice of prosciutto (folded), and a honeydew ball. Repeat on remaining skewers.
Step 3
Arrange skewers on a platter and drizzle with EVOO and honey, then garnish with flaky salt and red pepper chili flakes.
