ingredients

  • 2 ounces Prairie Organic Cucumber Flavored Vodka, divided
  • 2 tablespoons mint leaves, plus whole sprigs for garnish
  • 2 tablespoons sugar, or agave
  • 1 (1-inch) piece ginger, peeled and thinly sliced
  • 1/2 medium English cucumber, roughly chopped, plus sliced wheels for garnish
  • Ice, for serving
  • Sparkling water, to top

Method

  • Step 1

    In a blender, combine the mint, sugar, ginger, cucumber, and ¾ cup water. Blend until smooth, then strain through a fine mesh sieve, discarding any solids. Yields 1 cup.

  • Step 2

    Divide the cucumber juice between 2 ice-filled glasses and top each with 1 ounce Prairie Organic Cucumber Flavored Vodka. Stir to combine, then top each with sparkling water.

  • Step 3

    Garnish with cucumber wheels and mint sprig, then serve.
